This recipe can make about 16 cookies
Low-gluten flour 120g
Matcha powder 10g
Egg 20g
Caster sugar 55g
Unsalted butter 120g
Salt 1g
To make sure your cookies dough is tender, sift the low-gluten flour. Leave the butter out on the counter while you do this to soften it slightly. Be careful not to overwork the dough or it will become tough.
Firstly, preheat the oven to 302° Fahrenheit / 150° Celsius. In a large mixing bowl, beat butter, salt, caster sugar with a whisk until smooth and fluffy in light white color.
Add the egg mixture and continue to mix well with the egg beater. Add the sifted low-gluten flour and matcha powder, and then use a silicone baking spatula to stir evenly by cutting and mixing. Scrape the sides of the mixing bowl walls to bring the butter mixture to the center of the bowl.
Put the dough into a pastry bag, and squeeze out the cookie shape (can squeeze more on top to make it higher because the cookie will shrink and collapse after baking).
Bake in the preheated oven at 302° Fahrenheit / 150° Celsius for 20 to 25 minutes or until they are no longer glossy on top. Leave cookies to cool for 5 minutes on the baking tray then move them to a wire rack to cool completely and it’s done.
To Store: Matcha cookies can be stored in an airtight container at room temperature for up to 1 week.
To Freeze: Place cooled matcha cookies in a ziplock freezer bag. Seal tightly and freeze for up to 3 months.
To Thaw: Place cookie on a plate at room temperature for 1 hour or until ready to eat.
